Olive vs. Nectarine

I confess. I didn't write for a while as I was depressed with the fact that I discovered somthing new about our 'olive' tree. One day, my friend who was helping me pick the 'olives' from the tree said, 'they look like peaches.' By that time, yes, the 'olives' had started to grow bigger, pinkish, and peach-like. And I said, 'hmmm, yeah, they do look like peaches, don't they? but they are supposed to be olives.' She tasted one, I tasted one, and we realized they were peaches (nectarines, actually)!!!

We threw away all the curing 'nectarines' :(

But, guess what? Even after picking 100s of 'used-to-be-olives' from the tree, it kept growing more 'in-fact-nectarines.' We have been enjoying the nectarines every day.

Curing Olives: Day 14

It has been 14 days since we started the olive curing. We tried two methods: water curing and brine curing. Guess what? We killed the water curing one. I think the bacteria grew, as we weren't dumping the olives completely and wash them throughly :(

Brine curing one is very alive. You can see that the reddish color is almost gone, and some of the olives started to sink to the bottom of container. We are curing!
